Teriyaki Stir Fry

Put some olive oil in a fry pan.  Add onions and garlic.  Then pea pods, cilantro and broccoli (or any veggies you like)  Add a packet of stir fry noodles.  Usually they come with a spice packet too.  Then a little teriyaki sauce in the mix. Top with toasted sesame seeds. Very easy, very good.

Breakfast Scramble

Sautee lots of spinach in olive oil, in bowl mix up 2 eggs, salt and pepper, dash of cream, lots of shredded swiss cheese, add bowl contents to spinach.  Mmmm mmmm. 

Ok enough with the scrambles but did you know:

  • Spinach helps stabilize blood sugar.
  • Spinach is an anti-aging vegetable. 
  • Spinach is loaded with flavonoids that functions as antioxidants and anti-cancer agents. 
  • Popeye eats spinach.
  • Spinach contains choline and inositol, the substances that help to prevent atherosclerosis or thickening and hardening of arteries.
  • Eggs are great for the eyes.  
  • One egg contains 6 grams of high-quality protein and all 9 essential amino acids.
  • Eggs contain the right kind of fat. One egg contains just 5 grams of fat and only 1.5 grams of that is saturated fat.
  • Eggs may prevent breast cancer. In a study, women who consumed at least 6 eggs per week lowered their risk of breast cancer by 44%.

Veggie Egg Scramble with Hollandaiseessieish Sauce

Dinner tonight was goooood!  First I sauteed brown mushrooms, fresh chopped garlic, LOTS of spinach, (Wanted green onions but Safeway was out?  What up wit dat?)  in olive oil and some butter.  In another dish shredded swiss cheese, 5 eggs, 2 Tbs heavy cream, Real Salt, fresh ground pepper, chopped tomatoes.  In another pan, cream, little shredded mozerella, dash lemon juice, dash parmesean cheese, salt pepper.  Poured sauce over egg concoction.  Hubby says it was awesome.  I have trained him though and he has to say that no matter what.  :)

Ingredients needed for Binky Veggie Scramble:
  • brown mushrooms
  • spinach
  • green onions
  • tomatoes
  • swiss cheese
  • heavy cream
  • eggs
  • real butter
  • salt/peppa
Cheesy sauce:
  • mozzerella (shredded)
  • dash lemon juice
  • heavy cream
  • butter
  • salt and pepper
  • parmesean cheese
Disclaimer:  I am a dash of this and that cook so amount of ingredients may vary.  Use your favorite cheeses if you don't like the ones I used.  I just use whatever I have in the fridge.
